VEAGAN MEAL PREP FOR THE WIN!

We're 16 days into the new year and I'm happy to report that I'm still holding true to my Veganism goals. It hasn't been easy, but learning more about the food industry, definitely make it worth changing my eating habits for my health. Combined with a cardio and weightlifting regimen, I'm down 5 pounds!! I meal prepped my lunches and dinners for the week. Here's something that I made- definitely worth it to give them a try! My wrist action was crazy in the kitchen whippin this up!


Vegan Red beans and Cauliflower Rice:



This was so delicious that I've added it my meal plans permanently.  I can't give you an exact recipe, but here's what I used to whip up this tasty vegan meal: All things can be purchased at Trader Joes, excluding the Sofrito:


2 Cans of red beans

Chopped peppers (red, yellow, green)

Garlic

Thyme

Basil

Oregano

Garlic powder

Crushed red pepper

Pink Himalayan salt

Olive oil

1 can of crushed tomatoes

2 large spoonful's of Sofrito (verde)

1 bag of Cauliflower rice

1 1/2 cups of veggie broth (approx.)


The first thing I do is sauté the peppers and garlic in olive oil, when they become soft I add in the Sofrito and sauté until fully cooked.  Add crushed tomatoes, then toss in all my seasonings and let them simmer with veggies and sofrito.  Pour in the red beans,  one can rinsed, one can pour in as is.  Add your veggie broth and let cook on med-high for 10mins.  Reduce heat and smash some of the beans in the pot to thicken it up.  Cook on low for another 10-15.  Don't forget to stir that pot! 


Cauliflower rice:


Coat pan in olive oil and sauté garlic until cooked, throw in cauliflower and season with Himalayan salt and garlic powder.  I like to add in red pepper flakes ( I like my spicy foods). Taste and add seasonings to your preference.  Cook cauliflower until al dente. 


And POOF, like that you have your Red beans and Cauliflower rice.  I paired this with a side of fresh tomatoes and avocado.  So healthy, so Nice! :)
